Quick Question about Gas

TLDR At bottom! I used to be able to input whatever amount for gas that I wanted in metamask. Sometimes it would simply cost me the money that I attempted to spend on getting the transaction through by causing the transaction to die or half-complete.

It was a risk that was worth the reward when you knew what you were doing.

Now I can't seem to customize gas beyond a limit of what metamask thinks will get approved.

TLDR: I don't care how long the transaction takes, and I am willing to accept the risk that it won't go through. I just want to withdraw liquidity that I am providing on Uniswap without paying approx. 6x the combined balance of both of the assets I would be withdrawing. I'm using MetaMask. How can I do this?
