You seem confused, which is not surprising because most people who talk about privacy don't really know what they're talking about. (And I'm no expert either....) Privacy is a spectrum and Schnorr helps in that regard. But it's not like it will magically make all transactions private. If you send coins from an exchange to a Schnorr address you're nor much better off than sending to a legacy address. And today you might be even worse since not many are using Schnorr addresses to begin with.
Be careful with privacy, especially if you plan to use coins in a way that your government wouldn't approve. Don't believe the hype there's some kind of magic bullet that will make you completely obscure, it won't. You'll need several measures to have a reasonable expectation to privacy.
